Might overthinking it, but why does water seem to cool your burning throat after you take a hit/drag when the smoke and water are going down two different pipes; the trachea and esophagus?

At the back of the mouth the trachea and the esophagus are the same thing – they cross over. (They have to since your nose is above your mouth but your trachea runs in front of the esophagus in your neck.) This is also why you can breath (and take bong rips) through your mouth, because both tubes are connected.
