What about these plant compounds makes them toxic to humans? How do they make their way into herbal teas, honey and spice mixes?

They’re toxic to your liver, among other things. They exist in weeds, so when a field of (say chamomile) is harvested and processed they can get into the finished product (also bread). Honey is made from pollen by bees so that’s another vector (they can get into eggs and milk the same way).
