I want to do this to make extra money but how will this impact taxes, is it worth it, etc?

Be careful with this. There are a lot of “secret shopper” scams out there. Usually secret shoppers are direct employees of the company they are secret shopping for.
It is a job just like any other job and will impact the same way that doing any other job will do it is no different other than the hours worked and the wages paid.
