Most of the definitions I can find (Wikipedia, for example) say they are either plant derived or chemically derived, but what plants? What chemicals?

Taste works like a key in a lock, the sugar molecule fits in the taste cell like a key, so another molecule which has part of the shape of the molecule which fits the same hole will also stimulate the taste of sweetness.
