Well it depends on your settings but notifications from apps such as Fb or Reddit. Messages from WhatsApp and emails. Stuff like that

App updates if you have that setting on. Email and other apps synchronizing, otherwise you wouldn’t know you have a new email. For text messaging, if you’re actually using SMS that’s a sideband and doesn’t count towards your data but if you send MMS messages or use a third party text messenger such as Google messages which uses RCS then all or a portion of those go through the data part of your phone especially if you’re sending a text message. Lots of apps work in the background, you can see which apps do by going into your battery settings and see that there’s a setting to reduce background data usage for each app.

Many apps access servers on the internet, like Facebook, Whatsapp, Gmail/Mail apps, and so on. Typically this data is quite miniscule.

If you’re low on data, you can turn Mobile Data off, usually through a quick setting icon.

Software and app updates, things like checking for email or other incoming data (say downloading new podcast when released), etc. happen even when phone not being used.
