Bluetooth has a -lot- of different features you don’t normally need to deal with as a user setting up your headphones.

Pairing specifically is when two bluetooth devices exchange encryption keys so that they can talk to each other.

Bonding is saving those keys so that they can resume a connection long term. This let’s you say, bond with your card radio, leave, come back later and not have to set up a connection again.

With most commercial devices bonding and pairing are fairly synonymous, and the devices will automatically bond after being paired as a matter of convenience to users.
