What do these files do, and why are they important? How are they related to videos I shoot with my GoPro?

These are the small pictures and video clips which your phone app or the GoPro software can display without transferring a ton of data to show the actual clip.
Eli5, they are super small versions of your huge files that help you use the app.
It helps in the app so you can go through your files rather than clicking one, waiting for it to upload from the camera to your device, and then realizing it wasn’t the right file.
As far as the actual mp4 goes, they are copies and can be treated as such, after you’ve uploaded them to your computer feel free to delete them.
