What causes physics to appear realistic in animations / CGI?

Subtle things like how does one convey weight in movement, jumps, gait etc.? How does the human eye identify something as being readily computer generated (when done badly) w.r.t movement?

As /u/drafterman said there are 3 main methods to do it.

Another part is manually animating particular movements using the skeleton of a model for particular frames to override cases where the other forms create unrealistic motions.

Motion-Capture is generally considered one of the best for humans because it captures all the subtle movements that humans make.
