Since youre not just adding in alcohol like its another ingredient, what part of the production process differs between making alcoholic and non alcoholic beer?

An extra step at the end where they remove the alcohol. You make regular alcoholic beer like usual and then remove just the alcohol at the end. This is usually done using “vacuum distillation” which involves heating it up and evaporating the alcohol away under suction – which works because alcohol has a lower boiling point than the other components like water.

Like you said, the fermentation process makes alcohol *as well as all the flavours,* so we have no way of making beer that tastes like beer but doesn’t have alcohol. So they make beer including alcohol, then just remove the alcohol at the end and leave all the other flavour.
