What do the links that you get through those fraud texts, actually do to your phone if clicked?

Pretty much anything, which is why you shouldn’t follow them. Any device will have security vulnerabilities, it’s just the nature of technology. So the link could exploit one of those vulnerabilities and give them access to your phone. They might also be relatively benign, maybe only noting that your phone number is valid and receiving texts for use later in another phishing attempt. Or trying to harvest other info like your cell service provider. Or it might do nothing.

Usually just taking you to a phishing site, faking a well know website, trying to get you to enter your credit card info

At the very least they tell the spammer that you click links in emails and texts and that they should continue to send you more as well as try to sell your details to someone else as a “live” target.

At worst they can exploit your device, spy on you, steal your data and money, and much more.
