You’re lowering the air pressure inside the bottle, but glass is a rigid enough structure that it won’t collapse, so physics tries to pull stuff in to help equalize the pressure. If you do the same thing to a plastic bottle, the plastic collapses so there isn’t as big a difference in pressure, and physics doesn’t try to compensate in the same way.

You are reducing the air pressure inside. The air pressure outside remains the same, and the bottle is strong enough to resist the increased pressure difference. A balloon won’t work as well, when you suck the air out of it, it will collapse.
