When you hold stock it doesn’t really matter what the stock price is. The price only matters at the moment you try and sell it. So, when you’re transferring brokerages the stock price will be changing as usual but that doesn’t really mean anything for you until you eventually sell it.

You wouldn’t be able to sell the shares until the transfer of shares between accounts is completed.

When transferring shares between investment accounts, typically the shares themselves are transferred, not the cash value from selling them.
