What happens to fresh food if you put it in space?

I assume it freezes, but do the properties of the foods change? Is it still edible if brought back to earth?

It immediately dries out actually. In the vacuum of space, water boils away into vapor. This means if you put some food into space, the water will just boil out of it as vapor, leaving a mummified meal behind.
