Depends on the bone and the knife and how hard they were stabbed. Usually stabbings just go in between the bones, that’s the path of least resistance. Usually they would not break bones at all, neither breaking nor piercing them.
If they’re smaller, thinner bones like the ones in your palm, and someone stabbed you really hard and with a sturdy knife, they might potentially break the bones in your hand while stabbing it, though it’s unlikely.
