This is a pretty wide open question. They do just about everything from triggering growth, inhibiting growth, triggering budding, root growth, and really anything involved in a plant growing in any way. They’re all going to work in different ways though in complex chemical reactions.

There are auxins and cytokinins for plants grown. Abscisic acid for seed maturation and ethylene gas mainly to ripen the fruits.
