I saw a “crystal lite” slushie machine in a gas station as sugar free but it was the same cold and structural consistency as all the normal sugar-based slushes there. I thought this was chemically impossible.
What additive can achieve this?

I guess it’s different depending on who makes it. Slush Puppie the brand use Xanthan and/or Locust Bean Gum as thickening agents.
