– What is added to sugar free slushies to keep them the same consistency?

I saw a “crystal lite” slushie machine in a gas station as sugar free but it was the same cold and structural consistency as all the normal sugar-based slushes there. I thought this was chemically impossible.

What additive can achieve this?

Ice-based slushie? You can make an ice-based slushie with pretty much any liquid, with or without sugar. If it’s dairy-based or cream-based that might be different, but when I was a kid I used to make apple cider vinegar slushies. No sugar, just ice ran through a blender on the right setting and the. Apple cider vinegar.

I don’t recommend you do that, but you should try making your own slushies anyway. Just to see.
