– What is added to sugar free slushies to keep them the same consistency?

I saw a “crystal lite” slushie machine in a gas station as sugar free but it was the same cold and structural consistency as all the normal sugar-based slushes there. I thought this was chemically impossible.

What additive can achieve this?

I don’t know about slushies specifically, but I use the Ninja cremi to make diabetic friendly ice creams. Many sugar free and low fat ice creams use xantham gum as a stabilizer. You can look in r/creami and most recipes are geared towards people in the fitness/weight loss demographic.
