In a conventional sloop rig, the mainsail is attached in (approximate) straight lines along the mast and boom. The leach is not. The only thing keeping the upper part of the sail from trailing downwind is the tension in the leach. This trail is the twist you refer to. The main sheet tension and traveller position can be adjusted to set that tension as desired, usually depending on the wind strength. More wind, more vertical tension, typically.
