What is scent in terms of chemistry? Can inhaling too much scent kill you?

If the scent is poisonous, it can certainly kill you. There are urban legends of scientists being found dead by their lab notebook and the last thing they wrote is “smells like almonds”. Don’t know if that ever happened as the story is told but poisonous gases do have scents.
