Surfactants reduce surface tension, so liquids spread out.
Water molecules like to be near other water molecules which is why you’ll often see individual drops on a windshield, kind of like kids grouping up with their friends to play. A surfactant basically makes all the kids stink so they run away from each other and spread out.
