When you yawn your eustrachian tube opens up and connects your inner ear to your throat/nasal cavity to equalize the pressure in your ears. The opening sounds like a pop and while it’s open you hear your breathing louder causing a windy noise.

Moving the jaw very slightly changes the shape of parts of the ear canal, which is very close to the eardrum, and so seems a whole lot louder than it is. The surrounding bone also conducts vibrations to the ear drum and inner ear, which again can seem loud.

The noise is just things in your skull moving more than usual and your ear conveying that unusual movement as sound.
