There’s nothing different about a 5G SIM card.
All a SIM card is is a unique identifier for the network to be able to recognise your device on the system. Literally stands for “Subscriber Identity Module”.
You can of course subscribe to a carrier (or a plan) that does or does not support 5G – but that’s a difference with your subscription, not the sim card.
A phone being 5G capable or not is whether it has the internal hardware to be able to communicate with the 5G network. That is the only thing that matters from a technical standpoint.
