Your body metabolizes carbs into energy so if you eat carbs your body will process the amount of carbs it takes to maintain your bodily functions. If eat more carbs than your body needs it gets metabolized to fat (you body can’t actually process fats, it just emulsifies them, that’s what bile is for). Total carbs is the actual amount of carbs while net carbs are the carbs left over after your body has processed what it needs to maintain itself.

Total carbs is the amount of carbs if you added up all of the grams of carbs from every label of food you’ve eaten. Net carbs is that number minus the fiber you’ve eaten. Fiber isn’t digested the same way as a carbohydrate which isn’t fiber and doesn’t affect the blood sugar.
