Did you know there are many fortified packages of rice that explictly say don’t wash the rice, else you would rinse off the fortified nutrients.

People rinse it to remove the flour that has rubbed off each grain during processing and transport and would glue the grains together during cooking. If a porridge consistency is desired, then rinsing is not necessary.

To remove the natural rice starch left on it after polishing. Some rice comes with the starch pre-removed in Japan (無洗米- literally “no wash rice”) but tends to be more expensive. It does save a bit of time and of course, the work of washing it. Cooking it with the starch still on would make it sticky and porridgey like risotto.
