A flame holder is essentially a lower flow area that is used to prevent the continuously combustion flame from being blown out. This is essentially what you are doing when you hold your hand between the candle and the wind.

Imagine that I have a square tube through which we pass supersonic air. Now, in the middle of the tube, we knock out a square in the bottom of the tube and weld on a cubical box (the cavity) around the knocked out section. Most of the air will pass over the cavity leaving the cavity relatively calm and allowing the flame to remain lit.
