What makes glidebaits swim side to side and lipped baits wobble in the water?

I make fishing lures and I got them to swim but I don’t understand how or why they works. I’m hoping if I understand, I can make them better.

Vortex shedding. Friction between the water and the object. The water layer closest to the lure wants to stick to it. It slides off the lure in alternating swirls which cause the lure to wobble.
