Probably more to it than this but my understanding is that instant coffee is freeze dried brewed coffee (I.E, what you get after you brew regular coffee) and “regular coffee” is coffee beans and won’t break down in water. Instant is basically like mixing brewed coffee liquid with water I guess

Instant coffee was already brewed then dried. They can freeze dry or spray dry to remove the water and make it crystalize. Now when you add water it just has to dissolve instead of take the time to extract the flavor

Regular coffee is coffee beans that are roasted and then ground. When you add water to it some parts will get dissolved into the water but some remain solid. The coffee you during is the water and the dissolved part of the remaining coffee grounds are in some way separated from the liquid.

Instant coffee is no roasted and ground-up coffee beans you put in water. It is brewed coffee that you removed the water from. So the solid part of the coffee bean is not in it at all.

You make instant coffee by brewing regular coffee like what you dring and then removing the water either by freeze-drying or spray drying. It will dissolve fast in water because it only contains water-soluble compounds that are not bound to a solid.

Regular coffee already has a lot dissolved into it, (the coffee). And hot water just has more room for the instant coffee.

Instant coffee has been ground up into much smaller particles than regular coffee. This means that the surface area of the particles is much larger, and so when they come into contact with hot water they dissolve faster, allowing you to make a cup of coffee quickly.
