Regular coffee is coffee beans that are roasted and then ground. When you add water to it some parts will get dissolved into the water but some remain solid. The coffee you during is the water and the dissolved part of the remaining coffee grounds are in some way separated from the liquid.

Instant coffee is no roasted and ground-up coffee beans you put in water. It is brewed coffee that you removed the water from. So the solid part of the coffee bean is not in it at all.

You make instant coffee by brewing regular coffee like what you dring and then removing the water either by freeze-drying or spray drying. It will dissolve fast in water because it only contains water-soluble compounds that are not bound to a solid.
