The fibers used are infused with abrasion resistant materials. The one I own comes with cordura. Some of the heavy duty ones come with kevlar infused fabrics. Theres leather ones as well. Also its not just fabrics. Its also the way they are woven together that makes them resistant to abrasion. Weaving patterns in abrasion resistant clothes is much more meticulous and layered to ensure that it holds up. It is also in part due to the stitching and securing of the jackets. Most riding pants/jackets will be double stitched to ensure that the stitching doesnt come off under a large shearing force. The jackets will also be provided with welcro straps/zippers at multiple points to ensure a tight fit to the body so they dont slides off during a hug with the ground.
