There is a muscle that controls an orifice between the stomach and the intestines, which can control the overall flow from the stomach. The acid isn’t separated from the food; it’s all a big soupy mess. The acid itself is neutralized by bile from the bladder and gall bladder, so that the soup doesn’t mess with the intestines.
