What’re the differences between bitter, tangy, sour and tart?

Please like why is there 4 different words for other things that are “sour”??

Bitter is bitter. It’s not the same as any of the other ones. Sour is low ph, like a lemon. Lemons aren’t bitter. Grapefruit is bitter and sour. Tart implies tannins, which cause a dry and rough mouth feel. Tea can be tart. Wine can be tart and sour. Tangy is usually sour and slightly sweet, like a lemon.
