What’re the differences between bitter, tangy, sour and tart?

Please like why is there 4 different words for other things that are “sour”??

Bitter is not sour, bitter is coffee or not fully grown potatoes.
Tangy is a form of sourness that is often associated with exotic fruits.
Sour is literally sour: It’s the foundation because “sour” is the signal part of the tongue sends when triggered by a certain chemical
Tart is similar to Tangy but often being sweet as well.
