Bitter is the taste of poison. Caffeine, grapefruit pith, liquid medicines with Tylenol in them, and burnt foods taste bitter.

Sour, tart, and tangy are different ways of describing the taste of acid. Lemon juice, vinegar, yogurt, and cream of tartar all have acids in them that you can taste.

Bitter and sour are not the same thing. You can get really sweet sour things, there’s even a sauce named after that combo. Those types of things arent bitter at all.

Bitter is not sour, bitter is coffee or not fully grown potatoes.
Tangy is a form of sourness that is often associated with exotic fruits.
Sour is literally sour: It’s the foundation because “sour” is the signal part of the tongue sends when triggered by a certain chemical
Tart is similar to Tangy but often being sweet as well.

Bitter is bitter. It’s not the same as any of the other ones. Sour is low ph, like a lemon. Lemons aren’t bitter. Grapefruit is bitter and sour. Tart implies tannins, which cause a dry and rough mouth feel. Tea can be tart. Wine can be tart and sour. Tangy is usually sour and slightly sweet, like a lemon.

Basically it’s a combination of the food and why it tastes that way, and also where the taste hits your tongue.
