When you’re dehydrated, your blood becomes more dense and concentrated, and as a result water is pulled out of your cells through osmosis. This is bad for your cells, so you have special neurons in your brain that detect when your blood is getting too concentrated and triggers the feeling of thirst. Once you drink water, your blood becomes more diluted again, so your neurons stop sending you the signal that you’re thirsty.
