What’s the logic behind breathe in through your nose and out through your mouth?

I was trying to get my endurance better in running and one of the problems I always encountered was that I often stopped for water because the back end of my tongue felt really dry. I used to breath in and out through my mouth since I figured it would get more air in and out my lungs. I looked it up and most articles suggested breathing in through your nose and out your mouth so as to avoid the dryness and to keep pace.
