What’s the reason that some things, such as gemstones, may appear a different color to a camera than an eye?

Our eyes aren’t perfect, and have evolved to pick out and respond to certain colors differently. A digital camera has its own programming of what colors to represent in what ways, which may not be the same as our eyes.
