Raw meat is a bacterium’s dream come true. When stored improperly or for too long before consumption, seriously dangerous bacteria can grow unchecked.

The fibers of some meats allow bacteria to penetrate deep into the surface of the meat, which is why chicken has to be cooked all the way through. Others will mainly have bacteria on the surface, which is why it’s okay to eat rare steak.

Also, bad meat can’t be “fixed” by cooking it. Bacteria produce harmful toxins as a byproduct of consuming the meat, which are not neutralized by heat.
