What’s the science behind rhyming?

Whether it be a rap or poem, adding some rhyme gives that flow and “poetic feel” to it. Of course, too much rhyme can be cringe or whatever, but generally, that is the case.

I feel like we just accept that for granted. Why is it the case?

The most basic definition of what a rhyme is, is that the end of words sound the same. I believe that a big part of the appeal is that humans like patterns and repetition. All music is based in repetition to some extent. Even if that just means tapping on a table, the rhythm only makes sense because the times between beats are consistent. I think we like rhyme for a similar reason.
