When I’m typing I know where all the letter keys are on the keyboard without looking but when I’m not typing I don’t know where these same letter keys are

Muscle memory versus visual memory. You don’t have the keyboard visually memorized, but you have trained your fingers to hit the right keys in order to type the sentence you are constructing in your head, versus being asked to quickly locate a physical key visually or whatever.
