Onions (and other lobed vegetables like garlic) as a class of vegetable have a certain nutrient profile. Vegetables in general all have fairly good nutritional value but in addition to being about the only member of that family we eat, onions are quite intensely packed with their particular nutrients so pound for pound they’re considered “especially good for you” – although in reality you can’t fairly compare eating a pound of green beans to eating a pound of onions.
