Why are screenshots fuzzier and less crisp than the original image?

Is it just that the phone is trying to save file size space by saving a lower quality image?

It is indeed most likely that it is due to lossy compression. Most likely from JPEG compression which is one of the most common image compression algorithms. This compression is designed for pictures. Pictures tends to be kind of fuzzy in that there are few straight lines where the color suddenly changes. So the compression algorithm is optimized for this and manages to store very good quality photos in very little space without the compression being visible for humans. However computer generated images have lots of straight lines and huge contrasts. And JPEG struggles with this kind of image. It tends to turn in fuzzy and is still not able to compress it very well. There are other lossless compression algorithms like PNG which work very well for computer generated graphics. But that is horrible if you try to use it on a screenshot of an image sharing app or similar.
