Why are some beverages better enjoyed cold, while others are best while hot? Is there any science behind this?

I’ve always wondered this. Why is my coffee great when it’s hot, still good when it’s iced, but absolutely disgusting when room temp? Same for other beverages.

I know with some alcohols, the temperature can change the flavor and texture. With vodka for example it’s recommended that you chill it vs freezing it. Some flavor profiles shine in different temperature environments.
