Humans evolved to eat a wide variety of foods including both plants and other animals so we can tolerate things other animals find toxic.

Evolution. Other species took different routes of survival based on their geographic location and ecological niche. Humans were able to adapt to many different ecosystems and because of that have adapted different ways of surviving in each, including what they can eat from those varied ecosystems. Even within species there are some members who can tolerate a food and others who can’t just based on who their ancestors were and where they were from. The lactose in milk is fine for most humans up to a certain age but after can make some people very ill, all because some of our ancestors had to survive on animal milk during harsh weather or other circumstances, and other groups of people didn’t so their dependents didn’t develop the proper metabolic components needed to tolerate milk past childhood. No dog ancestors were ever exposed to chocolate because it wasn’t something readily available in their environment pre domestication.
