Your tongue has taste receptors that respond to things that are “spicy”. You can also get *sensations* of heat from things that irritate the lining of your mouth and throat. Lastly you can get feelings of warmth from your body constricting it’s blood vessels because it thinks you’ve been poisoned (this is what happens with alcohol).

I presume various chilies interact with these systems differently.
