Why are the inside of our mouths so much more heat tolerant than other areas of skin?

For example, if I touch a hot plate my hands feel really hot and I can’t hold it for much longer, but then when I eat the food in the plate, i can still feel the heat but it doesn’t hurt the skin as much and I can eat the food just fine?

Plus it is also a part of habit forming. Kids usually feel hitters than adults. With more episodes of hot food inside the skin becomes tolerant as well. Other area of akin may be made so.
