why are there separate neutral and ground wires for electricity when they both are connected to the same thing.

Another important thing in most of europe is that plugs are reversible. So in the appliance, you have to assume both wires are live. Then ground is there for safety.
Do anything built for an international market must differentiate between ground and neutral.
