why are there separate neutral and ground wires for electricity when they both are connected to the same thing.

Simplest answer is that the ground is purely a safety feature. Imagine a wire got loose and was touching your dishwasher frame. If ungrounded, you could get shocked touching it. If grounded a crap ton of current should flow through the ground wires, causing the breaker to trip near instantly.
