why are there separate neutral and ground wires for electricity when they both are connected to the same thing.

In many countries they are not the same thing at all. Earth is often local, neutral goes back to the transformer or generator and there can be a huge difference.
Don’t assume, like many sources do in books I’ve read going back decades, that they are always the same.
