why are there so many B vitamins?

B vitamins is just a classification grouping of vitamins. They are only B vitamins because someone decided they fit in that group. Importantly they are water soluble playing roles metabolism and red cell production.

Converting food to ATP is an important and complex process. And being complex has many steps and many needed chemicals to achieve that goal.

I believe they named vitamins as they came across them alphabetically, and then realized that what they called B vitamins were a group of similar structures so they then differentiated them with numbers but kept their B classification.

If I remember correctly. B vitamin was named before we had the biochemistry technology to really isolate them from each other. So they got lumped together. Then as chemistry advanced we noticed it was actually several things.
